    Morris Rutherglen Signature Single Malt Australian Whisky (700ml) / 40% This award winning Signature expression was made with Australian barley malted at the family brewery and pure, filtered water from the Snowy Mountains before being matured in a combination of American and French oak ex-Cabernet and ex-Shiraz red wine barrels that were then vatted and finished in Morris Rutherglen’s very own award-winning fortified barrels.

    Tokinoka Black, Blended Japanese Whisky (500ml) / 50% Tokinoka Black is a blended whisky created by Akito Ueda, Master Blender of White Oak distillery, who gives us a new version of Tokinoka the blend emblem of the brand. It’s a rather more fruity nose with aromas of tropical fruits and notes of toasted oak, precedes an appealing mouth experience with the appearance of woody aromas and some notes of citrus. Made from 50% malt whisky and 50% grain whisky aged in 3 different types of casks (Bourbon, Xeres and new oak), this version richer in malt presents a very nice roundness in the mouth and combines at the same time a spicy and creamy sharp side, with a soft and vanilla finish characteristic of Tokinoka.
    $ 130.00 AUD

    Armorik Whisky Breton 10 Year Old Single Malt French Whisky (700ml) / 46% Matured over 10 years, firstly in bourbon casks then oloroso sherry casks, this expression of Armorik reveals an innovative progression of the fruity character typical of the distillate, a balance between power and roundness enhanced by an explosion of exotic fruit with a hint of pepper. Limited Edition release.
    $ 130.00 AUD

    Togouchi whisky Sake Cask Finish (700ml) / 40% In the oak casks used for aging white wines in Japanese wineries, we matured Sake (junmai-shu) brewed by us and then used the Sake Cask to wood finish for Togouchi whisky. With a light fruit scent and a moderate acidity derived from white wine and Sake, a sweetness like brown sugar derived from the wood finish, the harmony of sweet taste with the mellow fruity aroma is enjoyable.
    $ 130.00 AUD

    Backwoods Single Malt Batch #5, Apera Expression (500ml) / 48% Crafted from a mash bill of 100% Australian malted barley from the Riverina region, we slow-ferment using a combination of speciality brewers' and distillers' yeasts and double distill in our copper pot still. Matured in ex-Apera casks, this is a distinctive Australian single malt whisky. Balanced and rich, with notes of butterscotch, burnt honey and spice.
    $ 139.00 AUD

    Michel Couvreur Overaged Single Malt Whisky (700ml) / 43% Burgundy is a place full of personalities at the high end of the passion scale, especially when it comes to food and drink - perhaps none more so than a Belgian who is presently maturing Scotch Whisky in the heart of the famous French wine region. The fellow in question is Michel Couvreur, and he's a man on a mission when it comes to Scotch Whisky. Tasting note: A vatting of single malts aged between 12 and 20 years in Pedro Ximenez casks. Brassy / gold appearance. Soft vanilla and malt on the nose. Some attractive dried fruits adding depth on the second inspection then more cereals and finally, fruit and nut chocolate. Immediately captivates with its svelte, cream - textured entry; lovely integration and balance with fruit and nut flavours augmented by buzzing spices. Good persistence.

    Chief's Son 900 Standard Single Malt Australian Whisky (700ml) / 45% The flagship offering from the family-run Chief’s Son Distillery, which is found in Victoria’s Mornington Peninsula region. This rich whisky was made with beer malt, with a touch of peat, and matured in former fortified wine French oak casks. Aged for a minimum of three years, 900 Standard is an excellent single malt, and a perfect introduction to the complexities of Victorian Whisky.
    $ 155.00 AUD

    Yellow Spot 12 Year Old Single Pot Still Irish Whiskey (700ml) / 46% Those familiar with Mitchell & Son's superb 'Green Spot' Irish Whiskey will be happy to know about the return of 'Yellow Spot'. The unusual naming convention has a basis in reality. The different colours refer to the practice of marking casks with a specific colour after determining the ageing potential of a whiskey: Blue spot was an 8 year old, Green Spot a 10 year old, Yellow Spot a 12 and Red spot a 15. The distinctive feature of Yellow Spot resides in the use of the Malaga casks: Think Jameson 12 with the heady scent of Moscatel and the sweetness of Pedro Ximenez grapes. It's a combination that makes for a rich Irish experience. As you'd expect, our allocation of Yellow Spot is miniscule so if you're keen to try it, don't delay.
    $ 160.00 AUD

    Togouchi 9 Years Japanese Whisky (700ml) / 41 From the town of Togouchi, made by Chugoku Jozo in underground tunnels. Chugoku Jozo is a Japanese brewery located near Hiroshima. It has been making liqueurs, sake, and the traditional Japanese spirit shochu since 1918. For decades, Chugoku Jozo has developed a knack for making some of the most beautiful spirits in the world. But it wasn't until 1990 that the brewery decided to dabble with whisky by creating its Togouchi line. The master blender carefully chose the distillates (malt and grain) which would be sent to Japan, grown, and blended in the Japanese fashion. The 9 years old refers to the minimum time each whiskies in the blend spent in barrels. NOSE: rather intense and pleasant, dispersing aromas of yellow fruits. PALATE: sweet spices, with the appearance of fruity flavors of citrus. In the end, peat and smoke come nicely together. Good stuff.

    2021 Kilchoman Pedro Ximenez Sherry Cask Matured Single Malt Scotch Whisky (700ml) / 47.3% This special edition, the first global release of this cask type from Kilchoman, is a combination of 33 casks, 9 only matured in Pedro Ximénez casks and 24 finished in PX casks for between 12 and 18 months. Having tasted numerous combinations, Anthony and Robin eventually settled on a vatting of roughly 2/3rds finished casks from 2013 and 1/3rd full maturation casks from 2015. The older casks have more layered depth of character compared to the big-hitting 2015 full maturation casks, combining the two produces the perfect balance of maritime smoke, citrus, berries and rich dark honey sweetness.

    Timboon Railway Shed ‘Smoky 1881’ Single Malt Whisky (500ml)/ 47% With a ‘little’ bit of Scottish peat used to give the barley a smoky taint, this whisky has been aged in 200lt + American oak, ex tawny port barrels. The Distillery has named the whisky ‘Smoky 1881’ as a tribute to the year illicit distilling started in the Timboon area.

    Glenallachie 18 Year Old Single Malt Scotch Whisky (700ml) /46% As a blender for over forty years, the warehouses are where Billy Walker really comes in to his own. Working with casks dating back to the 1970s, Billy has hand selected each barrel to be included in the 18 year old. It's created to 'showcase' the distillery's signature robust spirit "in harmony with heather and butterscotch notes. " As with the rest of the range, this was aged in American oak, Oloroso Sherry and Pedro Ximenez Sherry.

    White Oak Eigashima Sherry Cask Matured Single Malt Japanese Whisky (500ml) / 50% White Oak Distillery have released two new limited editions for 2020 to celebrate the 101st anniversary of their licence to distill. It's not the first time the distillery has highlighted the fact that they were licensed before Kotobukiya (Suntory) and Nikka. However they didn't actually build Japan's first whisky distillery. That was left to Yamazaki. The Eigashima Single Malt Whisky is made from 100% UK Malt. It is a vatting of malt whiskies distilled between 2009 and 2014 aged in sherry casks.
    $ 230.00 AUD

    The Glenturret 2020 Maiden Release 15 Year Old Cask Strength Single Malt Scotch Whisky (700ml) / 55% Despite the fact that Glenturret is the oldest working distillery in Scotland, single malt bottlings have been rare. There was an attempt to release three new editions in 2015, but that seems to have been delayed until late 2020. It was probably something to do with its sale by Edrington to the French luxury lifestyle company, Lilaque Group, together with one of its largest shareholders. Lilaque are, of course, the famous crystal makers located in the north of Alsace - which explains the extravagant new decanters. Glenturret's 15 year old is driven by refill wood. In other words, oak steps back and allows the original character of the spirit to sing. Bottled at high strength and non chill filtered.

    Highland Park 18 Year Old Single Malt Scotch Whisky (700ml) / 43% Perhaps more than standing stones, Neolithic settlements, a Viking Cathedral and Norse sagas, Orkney is famous for two distillieries: Scapa and Highland Park. The latter at 18 years of age has earned a place in the Scotch Whisky pantheon as one of the 'classics'. In short, a whisky every one should experience.

    Lark 2021 Christmas Cask Release 3 (500ml) / 46% This year, the Head Distiller carefully selects Tasmanian red wine casks filled with jus used by local artisan patisserie Jean Pascal for making their renown Christmas fruit mince pies. The result is Christmas in the glass: nutmeg, cinnamon and vanilla custard on the nose give way to gingerbread, citrus peel and liquid plum pudding with lashings of yuletide cheer.

    Hakushu 12 Year Old Japanese Single Malt Whisky (700ml) / 43% Hakushu aged non-peated malts in American oak and sherry casks, finishing it off with a peated malt aged in American oak casks. The result, according to Suntory, is a crisp, full-bodied sip with fragrances of jasmine and green apple. This current batch has apparently been aging for the past decade, waiting to be bottled. The Hakushu Distillery was opened in 1973, at the foot of Mt. Kaikoma and was nicknamed the “Forest Distillery” for its natural surroundings. Suntory was able to utilize spring water from the Southern Alps and peat to allow them to make a much different expression than what they were bottling at their nearby Yamazaki Distillery. Only 1 available.
    $ 420.00 AUD

    Suntory Yamazaki 12 Year Old Single Malt Whisky (700ml) / 43% Yamazaki Whisky is Suntory's flagship single malt, multi-layered with fruit and Mizunara aromas. The Yamazaki Distillery is Japan's first and oldest malt whisky distillery established in 1923 by Suntory's founder Shinjiro Torii - The Yamazaki Distillery is thus the birthplace of Japanese whisky. Other reviews...Deep amber/18-carat gold color; impeccable purity. This seductive opening aroma is gently spicy, malty and almost brown rice-like; the secondary aromatic profile is fully integrated, dusty dry, slightly woody/sappy and delicately spicy; understated, deep and enticing aroma of the first rank. Entry is firmly structured, moderately oily/viscous, nutty and candy bar-like; midpalate stage shows off a richness that’s world-class, toffee-like and woody/resiny. Ends richly, understated, nutty/nougaty and drier than the other two Suntory whiskies tasted for this issue. Excellent quality. Highly Recommended
    $ 440.00 AUD

    Gordon & Macphail Distillery Labels Mortlach 25 Year Old Single Malt Scotch Whisky (700ml) / 46% Gordon & Macphail allocated just a few dozen bottles to Australia. A no brainer for collectors if ever there was one. Given that Diageo recently launched a 26 year old Mortlach for $2,500 AUD, this gem from Gordon & Macphail is a steal. /Tasting Notes:/ Aroma: Rich and full; sherry and orange marmalade notes combine with stewed dates and prunes. Underlying herbal aromas surface and transform into brown sugar with gentle toffee highlights. / Taste: Pronounced sherry influences join crème brûlée, orange marmalade, sultana, and raisin flavours. Hints of mature oak appear whilst an aniseed edge underscores dark chocolate notes. / Finish: Medium with lingering charred oak and cocoa powder.

    Kavalan Solist Vinho Barrique Australian & New Zealand Exclusive Cask Strength Single Malt Taiwanese Whisky (700ml) / 53.2% A powerhouse malt, and just what you'd expect from this distillery. As one of the key players on the new world whisky stage, the 'Vinho' label is now highly sought after due to the exceptional quality of its cask program. Fully matured in x red & white American oak wine barrels, slow grown and seasoned in the open air for at least 34 months, the casks then undergo a process called STR (Shaved, Toasted and Re-charred). Controlled toasting converts wine residues into a complex mixture of fruit flavours. The casks are then briefly charred to release vanilla and caramelised sugars.

    Laphroaig 25 Year Old Cask Strength Single Malt Scotch Whisky (700ml) / 49.8% Laphroaig 25 Year Old Cask Strength is proof that good things take time. Slowly aged in ex-Bourbon barrels and Oloroso sherry butts, this Islay Scotch spends a quarter century resting in the warehouse on the edge of the Atlantic Ocean. Once it’s ready, its bottled without diluting it. Its lengthy time in barrel adds notes of sweet vanilla and spiced apple to the signature Laphroaig flavors of medicinal smoke and seaweed. Gentle sherry sweetness, imparted by the European oak Oloroso casks, helps to temper the powerful peatiness, and gently transitions into a fruity finish.

    Michel Couvreur Tria Juncta in Uno (1989 to 2019) Whisky (500ml) / 45% An exceptional blended malt is specially purposed for these last 30 years in order to share our personal vision of whiskeys. 3 malt whiskeys are blended: both upper class 25 yo and 29 yo very sherried whiskeys (PX casks) with our famous 16 yo Bere Barley malt whiskey. Entirely crafted by Michel, Bere Barley is a wild variety of barley, sown and harvested in Orkney, floor malted dried in summer 1986, distilled the 19th November 1986 in Scotland. Michel dreamt to produce a low yield whiskey following the pristine process. “Tri Juncta in Uno” (Most Honorable Order of the Bath Motto) is the Latin translation of “three in one”.
