About the Wine
Aromas of warm vanilla, black cherries and tea leaves invite you into this big, juicy Cab. The wine starts out very bright and fruit-forward. Leading with a lively acidity and flavors of ripe blueberries and blackberries. The wine then crescendos into a big, beefy mid-pallet, rich with gamy, meaty flavors with notes of cardamom and licorice. On the finish, the wine melts into a butter texture and leaves a lingering impression of fresh cherries.
About the Vineyard
This fruit was grown in the Adelaida District, on the West Side of Paso Robles, roughly 14 miles from the Pacific Ocean at an elevation 2,000 feet. The region is known for its ancient calcareous soils and warm, dry growing seasons provide excellent fruit maturity, while large diurnal swings of up to 50°F between day and night retain the grapes' natural acidity.
About the Winemaking
Received right at the turn of Summer, this Cabernet Sauvignon was macerated on skins for 20 days. It had a steady yet lively fermentation, providing brilliant extraction. It was aged in a mixture of neutral American and French Oak for 33 months to enhance the wine's natural complexity and structure.
