What is Cannelé de Bordeaux?
It is authentic French pastry from Bordeaux. Coated and caramelized with beeswax makes crisp crust, and custardy rum vanilla softens center. Preparation is super time-consuming. The batter needs to rest for 24 hours and baking takes an hour or more; tin-lined copper molds are used for their special shapes. All canelés are freshly baked daily and best eaten on the same day or within 2 days.
The Pate Bleu’s canelé followed traditional method of Bordeaux; keeping the same technique but adding our own flavors and finest seasonal ingredients
Best to eat:
Within 2 days at room temperature; or,
Keep frozen for 10 days
