Depending on your request we may not be able to accomodate. Please try to stay within the guidlines set out in the cutting form.

Be advised if ordering brisket you will be splitting the whole packer brisket with another customer as evenly as possible.

Beef orders automatically contain approx. 33% trim meat. Please indicate how many lbs. of stew beef and/or premade hamburger patties you would like, the rest will be processed into ground beef. If selecting "Ground" on any primal cut options below, this will increase your overall percentage of ground beef.
