If you will be sampling prepared food, Boulder County Public Health requires each exhibitor to have their own handwashing station. This can be as simple as a container that holds hot/warm water, soap, paper towels, and a catch basin. Note that the water may not flow onto the ground. You must dispose of this water in the toilets inside the Boulder JCC so that the captured water goes through the water treatment process. This rule does not apply if you'll be dispensing hot beverages from an airpot or handing out sealed samples.
If you are sampling prepared foods, you'll need to abide by Boulder County Public Health rules. If you are sampling a prepared food or cooked food that is sampled hot, those samples should be served in individual portions of one or two small bites. Servers should be wearing gloves. Please bring a small trash or compost or recycling can to place on the guest's side of your booth for appropriate disposal of the individual portion cup/napkin/plate or whatever material you'll be using. We encourage you to consider zero waste options for your serving materials, such as small canning jars or shot glasses or compostable products such as bamboo leaves or biodegradable plates. We'll have landfill, recycling, and compost bins available on-site.
