This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal).

*Freezer Paper-Under 70 lbs. HCW: $200 / Over 70 lbs. HCW: $250
*Vacuum Seal-Under 70 lbs. HCW: $250 / Over 70 lbs. HCW: $300
Definitions:
* hot carcass weight = the weight of the unchilled carcass, in pounds, after the head, hide, and internal organs have been removed.
** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.
