Coles Meat Processing
This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal).

Processing costs: Included Harvest Fee

*Freezer Paper-Under 70 lbs. HCW: $200 / Over 70 lbs. HCW: $250

*Vacuum Seal-Under 70 lbs. HCW: $250 / Over 70 lbs. HCW: $300

Definitions:

* hot carcass weight = the weight of the unchilled carcass, in pounds, after the head, hide, and internal organs have been removed.

** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.

When "no" is selected, those cuts will be processed into ground meat.

PLEASE NOTE: If you would like extra options please only choose 1 between Patties and Fresh Sausage (unless you choose all ground pick 2-3). Once all cuts are selected you do not end up with very much grind. We may have to call you for changes.

Hamburger Patties made at 1/3 lb. 4 per package (10 lb. minimum per flavor)
