This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal).

** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.
Ham, Ham Steaks, and Ham Hocks
All fresh hams and ham steaks are included in processing and wrapper fees.
All smoked hams, ham steaks, and ham hocks require extra fees:

Bacon
All whole fresh bacon (not sliced) is included in processing and wrapper fees.
All smoked and sliced bacon require extra fees:
Cost of smoked and sliced bacon is based on smoked weight.
CUSTOMER AGREEMENT(Processing): By signing this form I, First Name* Last Name* , agree to the order I have placed and the fees stated. I understand that freezer fees will be applied 10 days after processing is completed at $20 per day. Meat not picked up after 14 days will be donated.
