  • This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal). 

    Additional costs:

    Slaughter fee and Cooler Hang** (2-3 days)$65.00
    Definitions:

    * hot carcass weight = the weight of the unchilled carcass, in pounds, after the head, hide, and internal organs have been removed.

    ** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.

  • CUSTOM CUT SELECTIONS:

    When "no" is selected, those cuts will be processed into ground meat.
  • Ham, Ham Steaks, and Ham Hocks

    All fresh hams and ham steaks are included in processing and wrapper fees. 

    All smoked hams, ham steaks, and ham hocks require extra fees:

    • Sugar Cured Ham – $6.00/lb
    • Sugar Cured Ham Steaks – $6.50/lb
    • Natural Cured Ham – $7.00/lb
    • Natural Cured Ham Steaks $7.50/lb
    • Ham Hocks:
      • Sugar Cured Ham Hocks – $6.00/lb
      • Natural Cured & Smoked Ham Hocks – $7.00/lb
    • If no, meat will be processed into ground meat
       

    Cost based on finished smoked weight

  • Bacon

    All whole fresh bacon (not sliced) is included in processing and wrapper fees. 

    All smoked and sliced bacon require extra fees:

    • Fresh Sliced – $4.00/lb (Cost based on dressed weight)
    • Sugar Cured & Smoked Sliced – $7.00/lb
    • Natural Cured & Smoked Sliced – $8.00/lb
    • If no, meat will be processed into ground meat

    Cost of smoked and sliced bacon is based on smoked weight.

    All sausage is bulk wrapped @ 1 lb. packages or vacuum sealed 5-6 links per package.
  • Bratwurst

    10 lb minimum per flavor. 60/40 meat to pork fat ratio. Vacuum sealed 4-5 links per package.
  • CUSTOMER AGREEMENT(Processing): By signing this form I,   *   *   , agree to the order I have placed and the fees stated. I understand that freezer fees will be applied 10 days after processing is completed at $20 per day. Meat not picked up after 14 days will be donated.
