Should Cakes be Refrigerated?
- If not being served immediately, yes. Cakes should be set up no more than 1-2 hours before serving, kept indoors if possible or at room temperature of no higher than 70*F, away from direct sunlight, heaters or warm windows. Extended time in heat or sunlight may cause melting or structual damage.
Bring to room temperature for 10-15 minutes before serving for best flavor and texture.
Do I need AC in my car?
- When transporting cakes or other chilled desserts, it is best to arrive with the car already chilled and the AC on to prevent condensation, drooping, or melting. Never leave a cake in a warm car! Place on the flat floor, with soft items or other boxes to pad the cake box to prevent shifting. And drive slowly.
