This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal).
Additional costs:
For example: carcass weight x packaging = processing fees + Slaughter and Cooler fees = Total Price
Definitions:
* hot carcass weight = the weight of the unchilled carcass, in pounds, after the head, hide, and internal organs have been removed.
** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.
CUSTOMER AGREEMENT(Processing): By signing this form I, First Name* Last Name* , agree to the order I have placed and the fees stated. I understand that freezer fees will be applied 10 days after processing is completed at $20 per day. Meat not picked up after 14 days will be donated.
