    Coles Meat Processing
  • This is where you will choose the cuts of meat for the animal you purchased from the rancher. The processing fees are based on the hot carcass weight* and the packaging you choose (i.e., freezer paper or vaccuum seal). 

    Additional costs:

    • Slaughter fees and Cooler Hang** (minimum 5 days)
      • Small animals (up to 800 lbs) = $110
      • Medium animals = (801 lbs - 1000 lbs) = $120
      • Large animals (1001 lbs – 1200 lbs) = $130
      • Extra Large animals or Exotic breeds (i.e., buffalo, Highlanders, Yak) = $140

    For example: carcass weight x packaging = processing fees + Slaughter and Cooler fees =  Total Price 

    • Freezer Paper - $1.60/lb x 250/lbs = $400 + $120 = $520
    • Vaccuum Seal - $2.00/lb x 250/lbs = $500 + $120 = $620

    Definitions:

    * hot carcass weight = the weight of the unchilled carcass, in pounds, after the head, hide, and internal organs have been removed.

    ** cooler hang = the purpose of a cooler hang is to develop flavor and makes the meat more tender than it would be without.

    10 lb minimum per flavor. All fresh sausage is bulk wrapped @ 1 lb. packages or vacuum sealed 6 links per package.
  • Bratwurst

    10 lb minimum per flavor. 60%/40% meat to pork fat ratio. Vacuum sealed 4-5 links per package.
  • Jerky

    5 lb minimum per flavor.
  • Summer Sausage

    10 lb. minimum per flavor. 80/20 meat to pork fat ratio.
  • Snack Sticks:

    10 lb. minimum per flavor. 80/20 meat to pork fat ratio.
  • CUSTOMER AGREEMENT(Processing): By signing this form I,   *   *   , agree to the order I have placed and the fees stated. I understand that freezer fees will be applied 10 days after processing is completed at $20 per day. Meat not picked up after 14 days will be donated.
