You selected 'Matching New with Old'. I like to be certain that customers understand that a true "match" is relative. What one person thinks of as a match another might not agree is a match. In the masonry world, an unnoticeable match is simply impossible when making repairs or updates, regardless of what Mark on This Old House tells us! In Marks's "Matching" segments, he never shows a picture of the old mortar next to the new mortar.
With true Historical Restoration there are factors to be considered other than a visual match. Aside from those other factors, more effort can be put into a visual match, but it comes at a cost.
I always tell people to keep in mind that no matter how much effort we put into matching, you will always see the difference. It's just a matter of how much you are willing to pay to minimize the difference. Some effort is included with all of my work. I never just use plain mortar when it obviously has some color pigment in it.
