Our Simple Sampler is just half of our Quarter Beef. Since quarters contain cuts that don’t always come out evenly by count, the Simple Sampler is not always the same. We want to give you a good representation of what is in a full Quarter, Half, or Whole Beef and always do our best to pack your Simple Sampler with this in mind.

The Simple Sampler is an assortment of steaks (about 37% by count) : Ribeyes, New York Strips, Chuck Eye Steaks, Bavette Steaks, Top Round Steaks, Flat Iron Steaks, Ranch Steaks (Sirloin), Filet Mignon, Baseball Sirloin, Denver Steak, and Round Sirloin Tip.

You’ll also see a few roasts (about 4% by count) These might include: The American, Pikes Peak, Culotte, or Tri Tip.

You’ll also get special treats (about 9% by count): Fajita Meat, Short Ribs, Cheek Meat, Liver, Stew Meat.

In addition to the delicious cut listed above, a Simple Sampler includes roughly 50% (30+ units) of ground beef in 1 pound bricks. Our ground beef is raved about by chefs and home cooks alike!

*If you prefer to receive exact amounts of beef, we suggest you opt for a Quarter Beef. Half Beef or Whole Beef.
