Sarsa ng Kasarinlan - Sawsaw sa Kalayaan
an Independence day themed spicy sauces competition
This competition is open to all hot sauce makers.

MECHANICS:
1. Sarsa ng Kasarinlan - this category is for a hot sauce that somehow captures the essence of Philippine Independence Day through its ingredients, local taste, look and overall experience.
2. Sawsaw sa Kalayaan - this category is for a spicy vinegar that somehow captures the essence of Philippine Independence Day through its ingredients, local taste, look and overall experience.
* Participants need to create a hot sauce and/or spicy vinegar that will feature some of the top local produce of the Philippines which are on the list below. At least 2 ingredients from the list should be utilized in making the hot sauce. Ingredient used should be locally produced/harvested.

Sugarcane
Coconut
Banana
Mango
Pineapple
Coffee
Sweet Potato
Eggplant
Cacao
* Participants can also add a native product of the Philippines of their choice. This is not mandatory but would be a good addition.

Hot Sauce category reminders:
- Hot sauces should be pourable in terms of consistency.
- No spreads or highly viscous like butters, jams, etc., syrups and similar forms are also prohibited.
- Use of chili extract, capsaicin crystals or its derivatives are not allowed.
- Hot sauce should pass safety pH standards for hot sauces and have followed safety sterilization procedures.
Spicy Vinegar reminders:
- Vinegar to be used must be locally produced. Imported vinegars are not allowed.
- Vinegars can either be blended or binabad style.
- Vinegars that are too thick in consistency might be disqualified.
- Use of chili extract, capsaicin crystals or its derivatives are not allowed.
- Please follow standard safety sterilization procedures when bottling.

Bottle and label design:
- Bottle size accepted for hot sauces would be from 50 ml to 150 ml, for vinegars 100 to 375 ml only (only one bottle is needed for an entry, but you can submit multiple entries).
- Bottle label design must showcase any aspect of the Philippine Independence Day through your own interpretation together with the some theme or details coming from your created hot sauce or vinegar.
- Printed label designs only - no arts and crafts.
- Design must not indicate any sort of branding or association to the brand.
- No wordings should indicate any relation to the maker or brand.
- The label needs to identify/highlight which local product was used.
IMPORTANT!
Makers should submit a creation which is not found in their current or past line up/creation to prevent association and possible pre-judging.
ENTRIES THAT DO NOT COMPLY WITH THE MECHANICS MAY BE DISQUALIFIED.
