  • Drag Through Sharpener (Unpowered)

    Pro's & Con's
  • Pro's

    -Fast, Cheap
  • Con's

-Removes too much metal; Can chip harder blades; If burr doesn't fall off it can make the knife act duller than it really is; Produces very rough edge.
  • Drag Through Sharpener (Powered)

    Pro's & Con's
  • Pro's

Fast, Simple to use (kind of)
  • Con's

Can quickly remove far too much metal; Can easily hurt blade profile; If burr doesn't fall off it can make the knife act duller than it really is; Very easy to seriously damage blade; Expensive initial investment.
  • Whetstone (Freehand)

    Pro's & Con's
  • Pro's

Can create a perfect bevel and edge; Can produce unique bevel geometries; Preferred method
  • Con's

Extensive training and practice required to be efficient at sharpening; Moderate to high investment; Requires dedicated workspace; Can require distilled water; Difficulty in maintaining consistent bevel angle.
  • Whetstone (Guided)

    Pro's & Con's
  • Pro's

Can create a perfect bevel and edge; Can produce consistent bevel angles; Low amount of training needed
  • Con's

Moderate to high investment; Requires dedicated workspace; Can require distilled water; Guide can deposit material on the stone over time (ruining stone depending on guide material).
  • Diamond Rod (Sharpening)

    Pro's & Con's
  • Pro's

Can create a working edge quickly and easily; Low to Moderate investment
  • Con's

Very difficult to maintain consistent bevel angle; Training and high repetition required to obtain the desired angle; Can remove too much metal; No burr removal; Often used too frequently
  • Ceramic Rod (Refining)

    Pro's & Con's
  • Pro's

Can create a working edge quickly and easily; Low to Moderate investment; Can remove burrs
  • Con's

Very difficult to maintain consistent bevel angle; Training and high repetition required to obtain the desired angle; Can take extensive time to obtain the proper apex; Often used too frequently; Training required for proper burr removal
  • Steel Rod (Honing)

    Pro's & Con's
  • Pro's

    Revitalizes edge quickly and easily;
  • Con's

Very difficult to maintain consistent bevel angle; Training and high repetition required to obtain the desired angle; Not meant to sharpen, only deburr and straighten; Often used very little; Training required for proper burr removal
  • What we recommend...

  • You may not need us!

If your staff is extensively trained and experienced in freehand whetstone use, you have exactly 0 need for us! We're happy to offer our high quality stones and ancillary equipment, but that's it. Great job!
  • You may need us occasionally!

If your staff is moderately trained and somewhat experienced in guided whetstone use, we'd be happy to offer our services to occasionally reset the bevels to OEM angles and finishes, as well as repair chipped blades and broken tips.
  • You need us!

If your staff is using powered or unpowered drag-through sharpeners, the life of your knives is suffering. The burr's are more than likely not being removed (or partially removed creating snags), and there's too much metal being removed (significantly reducing the life of the knife, and creating an uneven profile).
  • You may need us!

If your staff is using the full suite... diamond sharpening rods, ceramic refining rods, and duburring steels, We'd be happy to reset the bevel angles and make them cut like brand new! Just make sure that the individuals that are using the diamond rods are trained in apex creation and angle consistency. If they are only using 1 or 2 of the rods, then we'd be happy to fill the gap and take care of your sharpening needs.
