  • please be aware that weight and packaging sizes are based on a carcass weighing 150-200 lb per quarter. Size of steaks and roast may vary according to specific animal. If you are not sure of your weight and or have any questions please contact shop before filling out cutting instructions. if you would like to get more familiar with where the cuts mentioned in the cutting instruction come from then click here. after you can make a more precise decision.   • Please be aware that sausage selections have a limit. Also you are limited to how much meat you bring in or have left over. you can make multiple selections, but you are going to get what is available in options by firts choice. A batch is 25lbs of meat, also referred to as per flavor. 

    example: if you have enough for four batches of sausage and you have selected all six choices, you will get the first four choices you make by default.

    If you have over the amount you have picked in choices, you will be contacted to pick your other flavors. if we are not contacted back with choice, you will have a double batch of the first choice made
