Compensation & Tier Self-Assessment
Compensation is based on experience, demonstrated capability, and role level.
All positions are paid on a fixed per-shift basis for a 3.5-hour shift (5:30pm–9:00pm).
Tier selection below is used for screening purposes only to understand your experience and expectations. Final tier placement and compensation are determined after training and demonstrated performance.
Please select the tier you believe best matches your current experience and ability.
Tier 1 – Entry / Training Level
Compensation:
• $70 per shift for the first 6 shifts
• $122.50 per shift after successful completion of the first 6 shifts
• No tips or service charges
This tier applies to candidates who are new to professional restaurant service or who do not yet meet the requirements for Tier 2 or Tier 3.
• Limited or no prior restaurant experience, or experience outside of fine dining
• Able to follow direction and learn service flow
• Comfortable assisting with clearing plates, basic service tasks, and dishwashing
• Washes dishes efficiently and carefully, without breakage
• Reliable, punctual, and willing to be trained to higher standards
Advancement to Tier 2 is based on demonstrated capability, not time alone.
Tier 2 – Experienced Support Level
Compensation:
• $87.50 per shift for the first 8 shifts
• $157.50 per shift after successful completion of the first 8 shifts
• No tips or service charges
Candidates at this level typically have prior restaurant experience and can perform service and dish responsibilities with consistency and care.
• At least 2 years of experience as a busser, runner, or dishwasher
• Able to ensure guest satisfaction during service
• Able to deliver and explain all courses accurately
• Clears plates and glasses in a timely, attentive manner
• Washes dishes efficiently and carefully, without breakage
• Demonstrates reliability, professionalism, and compliance with all job requirements and applicable laws
Placement at Tier 2 requires consistent demonstration of these skills during service.
Tier 3 – Advanced Service Level
Compensation:
• $105 per shift
• Eligible to receive 100% of tips on drinks sold during the shift only
• No service charges
• Target total compensation (base pay plus drink tips) may reach approximately $65/hour equivalent, depending on guest orders and tipping
This tier is reserved for candidates with strong fine-dining service experience who can independently manage drink service and maintain a high standard across the entire guest experience.
• At least 2 years of experience as a server or bartender in a fine-dining restaurant
• Meets all Tier 2 requirements
• Able to deliver plates promptly in coordination with the kitchen’s pacing
• Clears plates and glasses attentively as guests finish
• Independently takes drink orders, prepares drinks, delivers drinks, and charges them accurately to guest checks
• Holds a valid Blue Card and complies with all alcohol laws
• Completes dishwashing and cleanup by the end of the shift
• Delivers a consistently high-quality guest experience appropriate to a premium tasting-menu restaurant
• Capable of performing these functions for groups of up to 13 guests
Placement at Tier 3 is based on demonstrated performance during service and is not automatic.
Important Note
Final tier placement, compensation, tip eligibility, and advancement are determined by demonstrated performance during training and service, as outlined in the Employment Agreement and Service Standards & Training Manual. No compensation adjustments are made retroactively.
