Your cost is based on the hanging weight of your share per pound:
Ex: A half weighs approximately 350 pounds, but may vary depending on the animal.
Quarter - $4.50/lb. (split quater - limited cut choices)
Half - $4.25/lb. (customize your cuts with the butcher)
Whole - $4.00/lb. (customize your cuts with the butcher)

Butcher Cut & Wrap Fees:
$1.19 per pound hanging weight
Butcher/Harvest Fee:
$160 Whole / $80 Half / $40 Quarter
Disposal Fees: $5 per quarter beef (disposal of non consumable waste)
Additional Information:
You can expect approximately 60% of the hanging weight of your share to be cut and ready to fill your freezer. A 350 lb hanging weight = approx. 210 lbs take home beef.
The amount of ground beef available for each share depends on the cuts you select and the hanging weight. Want more ground beef? Select to have the roasts ground. The fat % is determined by the usable fat on the carcas, the only fat being added to your ground beef is from your share. No batch grinding.
Take home beef cost per pound is approximately $9 - $10 +/-. This includes all of your high end steaks and roasts as well as ground beef.

We'll be in touch as the butcher date approaches. Final payment, minus your deposit will be invoiced via QuickBooks and email. Payment can be made online or by mailing a check.
