Moroccan cuisine is rooted in humble ingredients—tomatoes, peppers, onions, pumpkin, olive oil, grains, legumes, eggs, honey, herbs, spices, and fragrant waters. Essential to its distinctive flavor are preserved elements like lemons, olives, vegetables in brine, and fermented butter known as smen. Traditional staples also include preserved meat (khlea), yeast-raised breads, couscous, and delicate pastry leaves called warka, used to make dishes like bisteeya.
