    The Flavors of Fiesta vendor category consists of LOCAL restaurants and caterers, serving tapas sized portions of their signature dishes. Your set-up must be contained within a 10x10 tent space, plus a minor footprint behind your booth. 
  • *PLEASE READ BEFORE APPLYING* UPDATES FOR 2026!

    The Pensacola Seafood Festival Flavors of Fiesta area, formerly known as "Gulf to Table", was created for local restaurants and caterers to showcase "Tapas sized portions of your signature dishes". Over the last few years, Flavors of Fiesta participants have grown their spaces into serving full meals. While we love the growth within the festival, we strive for differentiation between the traditional Flavors of Fiesta area and our larger food vendors.

    We are bringing back the Flavors of Fiesta area as it was originally intended. As a reminder, all vendors in this area should be serving "tapas-sized or "appetizer-sized" portions of this dishes. With that said, and working with feedback received from last year, we are contimnuing with our update from 2025, into the 2026 event.

    All vendors within Flavors of Fiesta are limited to a maximum of 6 menu items TOTAL. 

    AT LEAST HALF OF THOSE ITEMS MUST BE OFFERED IN A "TAPAS-SIZED" (SMALL) PORTION, NOT TO EXCEED $11.00.

    We want to give patrons a Taste of Pensacola, through Flavors of Fiesta! 

    Additionally, you MUST provide a menu, including pricing, when you apply. Please indicate which items are tapas-sized on each menu. 

    If you are interested in serving a full menu, with a full-sized meal, the Food Vendor/Alcaniz Alley area is going to be the best place for you. If you are interested in making the switch, please contact Mike Windhorst at pcolaevents@gmail.com.

  • *NEW LAYOUT FOR 2026!*

    The Pensacola Seafood Festival Flavors of Fiesta area, formerly known as "Gulf to Table", footprint is CHANGING! 

    We are no longer able to offer the parking spaces behind your booth. Those parking spaces are to remain empty and open. You will be afforded a small footprint behind your booth to do any necessary, outside of the tent, cooking, but that space is not to exceed 5ft.

    The tents will be arranged in a slightly different pattern to allow our guests to flow through Fountain Park more efficently.

    All Flavors of Fiesta vendors will be assigned one parking space in the Florida Public Archaeology Network parking lot, next to the Fish House. You may park a vehicle or trailer there, as long as it can fit within a regulation-sized parking space. Bayfront Parkway will be closed for the event, so should you be storing items in a trailer, getting to them will not be difficult during the duration of the event.

    These changes will be refreshing and truly enchance the guest experience. We appreciate your support and patience as we navigate this new footprint.

  • 2026 FLAVORS OF FIESTA APPLICATION

  • PROVIDED SUPPLIES

    Fiesta Pensacola will provide the following supplies for each participating restaurant. Anything beyond these items will be the responsibility of the participant.
    • 10x10 tent
    • Two 8ft tables
    • Electricity with limited lighting (see below)
    • ONE parking space in Florida Public Archaeology Network parking area for a service vehicle. 
    • Sign identifying your business (to be placed on your tent)
    • Advertising in Fiesta’s 2026 Pensacola Seafood Festival’s marketing materials if accepted PRIOR TO August 1, 2026.
  • It is required that you stay within your 10x10 booth space, and minor cooking area behind your tent, throughout the weekend - when setting up, cooking and serving.

  • POWER REQUIREMENTS

  • We are NOT responsible for calculating and/or balancing your load. Power to vendors is available with widely varied types of receptacles. It is your responsibility to have the correct male plug or be prepared to have your equipment hardwired. All 110 volt cords must be round grounded 12-3 and are furnished by the vendor.

  • Below, please indicate the total number of amps requested.

    Note: Higher voltage is not guarenteed based on application

  • Water service is provided by a limited number of hose bibs with male threads (like an outside home faucet). All hoses must be approved for potable water and must be furnished by the vendor.

    The power set-up at Fountain Park will be used by all Flavors of Fiesta vendors. Please be respectful of other vendors and do not bring large kitchen equipment that cannot handle the power load.

    Please attach a proposed menu that INCLUDES PRICE and which dishes will be tapas-sized. We know your menu may be subject to change between now and the festival, based on item availability. Please submit a menu as close to your planned menu as possible and report any menu updates if necessary. NO BEVERAGES!

  • FLAVORS OF FIESTA VENDOR CONTRACT

  • I understand and agree with the rules and regulations that are set forth in this application and agree to abide by and fully comply with said rules.  I understand and agree that the Fiesta of Five Flags Association, Inc. (henceforth known as "Fiesta Pensacola"), its related entities and the Pensacola Seafood Festival Committee are not responsible in any way for damage, loss or theft of me, my firm or of my customers and employees and agree to indemnify and defend and hold harmless the Fiesta of Five Flags Association, its related entities and the Pensacola Seafood Festival Committee against such loss, damage or theft. I understand that I will sell only approved menu items which do not contain imitation seafood. I hereby submit my signed application for the 2026 Pensacola Seafood Festival. I understand that failure to follow all rules to the satisfaction of the committee may result in the forfeit of my deposit and the closing of my booth.

     

    In the event that Fiesta Pensacola and the Pensacola Seafood Festival Committee are unable to hold the 2026 Pensacola Seafood Festival as scheduled by reason of war, acts of God, global pandemic or acts of nature (rain, inclement weather, etc.), or any other reason, or the Festival is interrupted in any way, no refund shall be made and it is agreed that all contracts are null and void.

     

    There shall be no responsibility or liability on the part of Fiesta Pensacola, its related entities or the Pensacola Seafood Festival Committee for any losses sustained by any person caused by such event.  Fiesta Pensacola and Pensacola Seafood Festival Committee in no way guarantees any return or benefits to vendor.

     

    It is further agreed and understood that Fiesta Pensacola, Inc., its related entities and the Pensacola Seafood Festival Committee assume no liability for any injury or death to person, property or any other damages or losses occurring in the Festival premises during the Festival.  I agree to forever indemnify and defend and hold harmless Fiesta Pensacola, its related entities and the Pensacola Seafood Festival Committee, officers, directors, employees, and volunteers from and against any and all claims, actions, causes of action, and lawsuits for loss, death or damage of person, property and any other loss whatsoever arising out of any act, omission or negligence in the operation or conduct of myself/business, including violation of any law, ordinance, code, rules and regulations, and all attorney's fees and costs incurred by those parties.

     

    All the foregoing is agreed to in consideration of and as a condition precedent to Fiesta Pensacola and the Pensacola Seafood Festival Committee providing to me/my business the applied for vendor space.  The indemnification provisions shall survive after the 2026 Pensacola Seafood Festival.

  • PHOTOGRAPHY RELEASE

  • By submitting an application to Fiesta Pensacola, the applicant and/or Artist, Business, or Group participating in the Pensacola Seafood Festival hereby irrevocably agrees and consents that his/her photograph, video digital or audio recordings, images, likenesses, comments and any displayed, dealt in and copyrighted by Fiesta Pensacola or its successors and assigns, and by any other person, corporation or association duly authorized by Fiesta Pensacola, with any restriction or limitation, for advertising and revoked by trade of every kind and any other purpose. This release is applicable now and in the future and cannot be revoked by applicant. It is understood and agreed that said photograph, picture, film, video, digital or audio recordings, images, likenesses, comments and any reproductions thereof, as well as any materials connected there with and the rights arising therefrom and thereunder, are the exclusive property of Fiesta Pensacola binding upon heirs, next of kin and personal representatives.

  • HELPFUL HINTS FOR SAFE FOOD HANDLING

  • We remind you that in accordance with Florida law, all food vendors must be compliant with current Florida guidelines for Temporary Food Service Events.  Please review the following helpful hints which will help to assure your booth will meet current Florida regulations:

    TO PREVENT FOODBORNE ILLNESS

    • Obtain foods from an approved source.  Home prepared food is not allowed.
    • Wash hands thoroughly before and after handling foods.
    • Maintain hot foods at temperatures of 135 degrees Fahrenheit or above.
    • Maintain cold foods at temperatures of 41 degrees Fahrenheit or below.
    • Cook ground beef to a minimum of 155 degrees Fahrenheit.
    • Cook chicken to a minimum of 165 degrees Fahrenheit.
    • Take frequent food temperatures.
    • Heat foods quickly and cool foods rapidly.
    • Keep raw and cooked food separate.
    • Thaw foods properly: completely submerged under running water not longer than four hours, as part of a cooking process, or through refrigeration.
    • Use single service articles wherever possible.
    • Keep foods covered and protected from dust, dirt, insects, vermin, and human contamination.
    • Minimize handling of foods before, during and after preparation.
    • Do not use swollen, leaking, or damaged canned goods.
    • Store all food product and equipment at least six inches off the ground.

    ITEMS REQUIRED AT A TEMPORARY EVENT

    • Sanitizer
    • Probe thermometer
    • Chemical test strips (for measuring sanitizer concentration)
    • Hair restraints such as a hat or hair-net
    • Adequate supply of back up utensils
    • Adequate supply of potable water
    • Soap and single service towels
    • Fire extinguisher (properly tagged and correct type)
    • Adequate facilities and equipment to maintain food at the proper temperatures
    • Adequate protection from flying insects, vermin, dust and dirt
    • Adequate protection for food displayed, prepared or stored
