What this looks like on a real shift
Example 1 — Server, Friday dinner. Sales rung: $1,000 food and N/A beverage, $400 beer, wine and liquor. Bar tip share 7% x $400 = $28.00. Host pool 1% x $1,000 = $10.00. Expo pool 0.5% x $1,000 = $5.00. Busser pool 0.5% x $1,000 = $5.00. Total contributed $48.00 — every other dollar of tips on those checks stays with the server.
Example 2 — Bartender, same night. Food and N/A beverage rung at the bar: $600. Host pool 0.5% x $600 = $3.00. Expo pool 0.25% x $600 = $1.50. Busser pool 0.25% x $600 = $1.50. Total contributed $6.00. The bartender also receives 7% of every beer, wine and liquor sale rung by servers and shift managers that night, plus an equal share of every online order tip while clocked in.
Example 3 — One online order. A $72 online order comes in with a $12 tip. Clocked in when the order was opened: 1 Bartender, 1 Expo, 2 Hosts — four people, one point each. $12.00 divided by 4 = $3.00 each. Hours already worked make no difference to the split.
