Vermilionville continues to host monthly workshops allowing you to learn a craft from the Acadian, Creole and Native American ways of life. Topics range from woodcarving to foodways (and many things in between).
Tom Villien, owner and developer of TJ’s Specialty Products, is an expert in seasonings, peppers, rosemary and everything used to create authentic, Cajun flavor. During this class, he will discuss all things filé - how it is grown, harvested, dried, processed and utilized to make a popular Acadian dish, gumbo. He will even discuss its history, fresh file versus store bought and regional differences. Participants will grind leaves into filé using a traditional mortar and pestle. And, of course, there will be gumbo! Oh…and don’t forget to bring a container to take a little filé home.
