Many of our customers have never thought about where or what cuts of meat are on a side of beef. A typical custom cut sheet would list cuts in the order that the butcher would cut them, thus giving him a road map to follow as he works. We follow that same road map in this easy to use pick and choose menu.
Tips:
It is important to know that some steaks are cut from the same place, T-Bone, or Porterhouse T-bone is a combination of Filet one side of the bone and NY strip on the other. For this reason you will see the choice to choose between these cuts.
First decide what your family uses more, roasts, steaks or ground beef.
For our Ground beef families: If you never buy or use a roast now, you most likely won’t start now. Every choice you make takes away from the lbs of ground beef you will end up with. You can always specify if you want 1 roast, for instance if you want to try a chuck roast then specify 1 chuck roast grind the rest. That way you can have a few choice roasts and not feel like you didn’t get enough ground beef to meet your needs.
