• The Historic Manhattan Casino ("THMC") is all about opportunity.

    Our goal is to create a community of diversified culinary teams who have created innovative food concepts using unique ingredients, presentations and cooking methods. Members of the Food Hall will work in a designated station in a shared kitchen and will have access to the space and equipment they need for a reasonable monthly fee. THMC provides the full service restaurant, all staff other than chefs and supporting cooks, the POS system, and other parts of the full service restaurant experience - allowing our Members the ability to focus on further developing their recipes, market, and business model without the upfront capital costs associated with opening an independent brick-and-motor restaurant. We are looking for experienced food industry professionals who either want to expand from catering and/or a food truck to a restaurant setting with the goal of opening their own restaurants in the future or who want to test new concepts for additional restaurants. If an applicant does not have sufficient experience, THMC may suggest participation in the Food Lab Incubator based at THMC as an alternative.

    OUR GOAL

    • Support start-up local food businesses by providing access to equipment and facilities.
    • Provide an avenue for existing food businesses to try out new concepts Increase our community members' access to locally-grown and prepared products.
    • Be the launchpad for new restaurants in the St. Petersburg community.

    APPLICATION

    Each applicant must:

    • Watch a virtual information video (On demand on YouTube)
    • Complete and sign the Food Vendor Membership application including all attachments (see attached)

    Qualified applicants (based on submitted materials) will be asked to:

    • Participate in an Interview with Managing Partners
    • Complete a tour of the THMC kitchen facilities (the "Kitchen")
    • Participate in a Tasting Event where the applicant prepares selected menu items in the kitchen at the Manhattan Casino for a group of 15-20

    Restaurateurs who are selected for the Food Hall will be asked to:

    • Sign a membership agreement that outlines the terms of the Food Hall Membership
    • Provide refundable deposit fee of $500.00 (one time fee)
    • Prior to opening your concept at THMC Food Hall, you must provide a certificate of insurance showing current comprehehensive general public liability coverage with respect to THMC, having limits of liability for bodily injury, death and property damage of not less than a combined single limit of $1,000,000 per occurrence, with $2,000,000 total coverage. This certficate of general liability insurance must list Callaloo Operations Group, LLC, Callaloo Group LLC, and the City of St. Petersburg, FLorida as additional named insured.
    • Process a certification or sign up for training at THMC for ServSafe training.

  • In consideration for and as a condition of the Membership and use of the above stated facilities, applicant agrees to indemnify and hold harmless Callaloo Operations Group, LLC, Callaloo Group and the City of St. Petersburg, Florida, its elected officials, and employees and agents of both, against any and all claims, demands, causes of action, damages, costs and liabilities resulting from or caused by the use and occupation of the facility, including attorney fees incurred as a result of any indemnified claim, whether such use is authorized or not and whether arising from the negligent or willful act or omission of the applicant or any of its officers, agents, employees, guests, patrons, or invitees; and the applicant shall, at its sole risk and expense, defend any and all indemnified claims, actions or legal proceedings which may be brought against any of the indemnified parties, using attorneys reasonably acceptable to the indemnified parties.

    By signing below, applicant verifies that applicant has watched the information video and

    wants to be considered as a food hall restaurateur.
