Ground & Sausage - You will receive 8 pounds. Sausage seasonings are our signature blends made with organic and fair trade herbs and are gluten free. Please indicate which from the options below you'd like included:

Front Shoulder - This is where the roasts, country style ribs & pork steaks are. You will receive approximately 12 lbs of cuts. If you choose not to receive one or more of these options we will add in more of the cuts you would like. Please select from the options below:

Ham - Hams are bone-in and cured & smoked. You will receive approximately 10 pounds of ham. Please select from the options below:

Hocks & Shanks - Hocks are bone in and come from the leg portion just below the ham and shanks from the leg just below the front shoulder. You will receive 2. Please select from the options below:

Lard - You will receive both back fat and leaf lard. Both are ideal for high heat cooking, frying, sauteing & baking. Leaf lard is ideal for use in pastries and pie crusts. Please select from the options below:
