  • Learn the secrets to making delicious tamales with Richard Lambert, founder of National Tamale Day. 
    You will be one of just six participants at Richard’s tamale kitchen in Santa Barbara. Class tuition is $75.

    Great tamale-making is all about technique. In this hands-on class, Richard demonstrates how to create flavorful tamale salsas, how to select ingredients and use textures to enhance your tamales, step-by-step guidelines for assembling your tamales (you'll practice doing this), and methods for steaming and storing your tamales. 

    The class is designed for beginners as well as those with more experience. By limiting the class size, Mr. Lambert provides personalized instruction to each of the six participants.

     

    The class will be held on Saturday, May 3rd, from 1:00 PM to 3:30 PM at our kitchen, 4540 Hollister Avenue in Santa Barbara.

    We provide: 
    1. A cutting board and work station.
    2. A kitchen apron and culinary gloves.
    3. All ingredients needed to make your tamales.
    4. 25 sheets of parchment paper (to take home and use for future tamale-making).
    5. Richard's salsa and tamale recipes. 
    6. A listing of tamale equipment and ingredient sources.


    What to bring:
    1. A chef's knife (if you have a favorite), otherwise we have one for you.
    2. A masa spreader. You'll need this later, when you make tamales on your own. $9.99 Source
    3. A cooler to take home your tamales (we have
    ice available)
    4. A pad and pencil or pen for notes. 

    What You'll Take Home:
    In addition to learning how to make a great tamale, you'll likely be able to make enough tamales for a fun dinner.
